Ingredients
- 1 cup old-fashioned rolled oats
- 2 tablespoons chia seeds
- ¾ cup unsweetened almond milk
- ½ cup plain Greek yogurt
- 1 tablespoon honey or pure maple syrup
- ½ teaspoon vanilla extract
- ½ cup fresh blueberries
- ½ cup fresh strawberries, sliced
- 2 tablespoons sliced almonds
- 1 tablespoon almond butter
- Pinch of cinnamon
- Optional: 1 tablespoon unsweetened shredded coconut
Instructions
- In a bowl or large jar, combine oats, chia seeds, almond milk, Greek yogurt, honey or maple syrup, vanilla, and cinnamon.
- Stir thoroughly until the chia seeds are evenly distributed.
- Fold in half of the blueberries and strawberries.
- Cover and refrigerate for at least 6 hours, preferably overnight.
- In the morning, stir the oats. If they are too thick, add a splash of almond milk.
- Top with the remaining berries, sliced almonds, and almond butter.
- Add shredded coconut if desired.
- Serve chilled.

Prepare up to four jars at once and refrigerate for up to 4 days. Add the toppings just before serving for the best texture.
