Ingredients (Serves 3–4)
- 2 tbsp olive oil
- 1 onion, sliced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- ¼ tsp chili flakes (optional)
- 1 can crushed tomatoes
- Salt + pepper
- 4–6 eggs
- Feta + parsley (optional)
Instructions
- Sauté onion + pepper in oil until soft.
- Add garlic + spices for 30 seconds.
- Add tomatoes, simmer 10–15 min until thick.
- Make small wells, crack eggs in.
- Cover and cook 6–10 min until eggs set.
- Top with feta/parsley.
