Ingredients (Serves 6)
- 1 tbsp oil
- 1 onion, diced
- 3 cloves garlic
- 1 tsp cumin
- 1 tsp chili powder
- 1 can crushed tomatoes
- 6 cups chicken broth
- 2 cups shredded cooked chicken
- 1 cup corn (optional)
- Salt + pepper
- Tortilla strips, avocado, lime, cilantro
Instructions
- Sauté onion until soft. Add garlic + spices.
- Add tomatoes + broth, simmer 15 min.
- Add chicken (and corn), simmer 5 min.
- Serve with tortilla strips + toppings.
